Basketball season for Hunter and his teammates ended two weeks ago in overtime to a top seeded team. That team ended up losing the next night and not going to the state tournament. Last weekend, Hunter watched a team win a state championship that beat three undefeated teams in the state tournament.  His dreams are big.  He plots, plans and…

Crock Pot Turkey & Bacon 3 Bean Chili

Filed Under: Proteins, Recipes Tagged With: bacon, cooking, hunk of meat Monday, meat, protein 4 Comments

On week nights if we aren’t pulling out a meal from the freezer from one of my many “make ahead meals“, we are eating supper from the Crock-Pot…actually ours is Betty Crocker brand and it’s a “slow cooker” I suppose. Our meals are not fancy. They feed hungry people. But last week as I dumped a meal together my husband declared…

Baking Blueberry Flax Muffins

Filed Under: Dessert, Family Values, Recipes Tagged With: baking, cooking with kids 4 Comments

Making healthy muffins for snacks and quick breakfasts is easy to do. But I prefer the recipes with a lot of butter and eggs. I’ve been experimenting with ground flaxseed recently in baking. Yesterday we had success with a modified low fat blueberry wheat bran muffin recipe. My kids won’t eat a bran muffin. But they will eat Blueberry Flax…

So much snow (and wind earlier this morning) arrived that our rural school was called off, a very rare occurrence.  For this fine Leap Day, the girls took a leap into the freshly found snow drifts. Fresh snow tastes great…  so do mittens.  Sledding…

Welcome to the Prairie…

I am a mom of three kids and a wife to Nathan. Together we live on the North Dakota prairie, 97 miles from a Starbuck's. I share about family, food, farming and the prairie that I love. I used to commute 98 miles one-way to work but it required too much coffee. So now I am home, consulting, speaking, writing and primarily, juggling family life.
