Crock Pot Turkey & Bacon 3 Bean Chili

On week nights if we aren’t pulling out a meal from the freezer from one of my many “make ahead meals“, we are eating supper from the Crock-Pot…actually ours is Betty Crocker brand and it’s a “slow cooker” I suppose. Our meals are not fancy. They feed hungry people. But last week as I dumped a meal together my husband declared this was a “keeper” and that I should write this one down so I actually can remember to make it again. I’m not known for making something twice in my dump and go slow cooker recipes.
I wrote it down…as Turkey & Bacon 3 Bean Chili Recipe and it made even my husband who never adores Chili or beans very much…ask for more. Indeed, it’s a simple recipe and a winner.

4 cans Rotel sauce (6 oz. size…I think)
2 cans petite diced tomatos
1 can corn
1 can black beans
1 can butter beans
1 can chili beans
1/2 cup water
8 slices bacon, cooked and diced
2 lbs. browned turkey burger
1 finely diced large onion
1/4 cup brown sugar
1 TBSP chili powder
1 TBSP Cajun seasoning

The day before I browned 2 lbs. of turkey burger with one large diced onion and drained off any fat.

I combined all other ingredients including cooked and diced bacon, corn, chili beans, black beans, butter beans and Rotel tomato sauce. My mom found this new Rotel sauce in our local grocery store and was the first to make chili at our house with it. It’s now my “go to” canned tomato sauce. I often use frozen sauce from our garden tomatoes but the Rotel sauce is a mighty fine canned sauce. I also added 1/2 cup water.

The only seasonings I added were Chili Powder, Cajun seasoning and 1/4 cup of brown sugar. I put it in the fridge overnight.
Early the next morning I plugged in the slow cooker on the kitchen counter, covered and turned to low. Through the years I have spent a lot of time fussing over different chili recipes. This time less fussing does the trick! Nearly 10 hour later we were eating chili.
You can sprinkle with shredded cheddar cheese or some low fat sour cream and enjoy!
