Cucumber Refrigerator Pickle Recipe

I had a few requests for this recipe. Here it is…direct from my Grandma Nola’s email she sent me today with the recipe. (Thank you Gma!) You have to really love a grandma who emails recipes! Let me know if you make this recipe. I absolutely love these cucumbers. After reading recipes from Southern Living today on the plane I was thinking of posting a few recipes once in awhile on this blog. It struck me that my grandma and mom’s recipes are better than those I was reading in that magazine today!
Cucumber Refrigerator Pickles

8 or 9 cups thinly sliced unpeeled cucumbers . I use the thin slicing blade in my food processer.
1 onion, sliced thin
Mix together:
1 cup white vinegar
2 cups sugar
1 Tbsp salt
1 tsp celery seed
Pour this mixture over cucumbers in bowl. Mix well. Cover and store in refrigerator. They can also be put in jars.
Makes about 2 and 1/2 quarts. They keep for 6 to 8 weeks, but mine never last that long.

    I love refrigerator pickles. . . they are super yummy. . I was wondering what I was going to do with my many cucumbers and you just reminded me. . thanks!!
