It’s Hunk of Meat Monday. What’s cooking at your house this week? With my husband’s St. Patrick’s Day birthday, I ventured into making corned beef for the first time. And not just 3 lbs. of corned beef. It was more like 37 lbs. of corned beef to feed 54 people.  The recipe I started with came from AllRecipes.com and the…

Thankful For The Helicopter Overhead

Filed Under: Life in North Dakota, Small Town Living Tagged With: North Dakota, prairie, rural healthcare, rural life Leave a Comment

There isn’t a military invasion or even a drill on the rural prairie when we hear the sound of a helicopter. A famous diplomat is not about to land for a visit.   Instead it signs there is a medical emergency on the prairie. The helicopter swoops in from the big town 100 miles away and lands on the town street…

But Anika ventured quickly into the new found Spring…

Welcome to the Prairie…

I am a mom of three kids and a wife to Nathan. Together we live on the North Dakota prairie, 97 miles from a Starbuck's. I share about family, food, farming and the prairie that I love. I used to commute 98 miles one-way to work but it required too much coffee. So now I am home, consulting, speaking, writing and primarily, juggling family life.
