Hunk of Meat Monday: Easy & Low Fat BBQ Chicken Bake

Filed Under: Uncategorized Leave a Comment

Low fat, easy and quick meals are ideal on a busy night for us. Plus I like to use ingredients I have on hand. I’m starting to get creative. Last night, I had a toddler who “helped” me quickly pull together a chicken bake using “Heart Healthy” Bisquick as a crust, barbeque sauce, chicken, mushrooms, green onion, spinach and mozzarella…

Building big basketball dreams in the barn

Filed Under: Life in North Dakota, Small Town Sports Tagged With: prairie life 10 Comments

There is a teenage boy at our house whose number one love is basketball. This weekend one of his basketball dreams came true in the barn.   Hunter is working this summer, earning a “real” paycheck in our family business in between days of daily baseball practice and numerous games a week. But he wants to be shooting baskets any other…

What little girls love in the summertime

What do little girls love in the summer time?  Farming with Grandpa Fred.  My mom had a couple posts this week on our family farm blog GriggsDakota as the girls got in on late Spring seeding of canola and planting soybeans.  Miss A was holding my phone in the above picture and yes it says “#AgNerd” on the back of…

What could I quickly pull together in 10 minutes to quickly feed a boy that needs to eat before (and after) baseball practice? Last night while Nathan was grilling pork chops, I stirred together this Vegetable Pasta Salad. The real treat in it and twist in flavor was adding Walnut Oil to it.  Plus we added chick peas, artichoke quarters, dried…

Welcome to the Prairie…

I am a mom of three kids and a wife to Nathan. Together we live on the North Dakota prairie, 97 miles from a Starbuck's. I share about family, food, farming and the prairie that I love. I used to commute 98 miles one-way to work but it required too much coffee. So now I am home, consulting, speaking, writing and primarily, juggling family life.
