Hunk of Meat Monday: Ultimate Nachos

To feed my family a fast complete meal, I’ve been making nachos lately. Not just any nachos, they are Ultimate Nachos, according to our hungry like a pack of wolves teenage son. 
I chop up plenty of tomatoes and peppers from our garden, other veggies, any leftover grilled meat we have on hand and sprinkle with cheese. 

Having a supply of juicy and fresh garden vegetables right now is fantastic and I will revisit photos of garden tomatoes in the dead of the prairie winter to give me hope of another plentiful garden come summer again.

I mix in pita chips with tortilla chips on a jelly roll pan and decorate them with the layers of tomatoes, peppers, chopped artichoke hearts, sliced meat, cheese and olives.

To season, I sprinkle with Cajun seasoning or a bit of Chili Powder before broiling at 500F in the oven for 4-5 minutes.

This is an easy and fast meal to feed my family on the go and I even serve it to guests on the go.

My smiling sister who is a local volleyball referee had Ultimate Nachos as her pre-game meal at our house.

Two pans of nachos and a bowl of sliced peaches and bananas on the side with glasses of milk made for a fed family and smiles at our house.

Ultimate nachos far out weigh the nacho cheese pumped over tortilla chips from a concession stand and are a great way we get little ladies to try a few extra veggies.

Now that summer weather is cooling a bit are you getting back into a cooking routine?

I’m home all week and am looking forward to a routine of family evening meals…post football game and practices for our son.

    Your nacho recipe looks yummy and easy. Clean out the fridge type recipes are good to have in the back of my mind.

    Hubby is hauling hay and this next week we will be busy with cattle work. NO, we are not back on a regular supper schedule.

    I did make some good dinners this weekend. Made me feel like a real person again!

    This does look very good. Nice and hearty and nachos are a fav of mine. I am cooking a bit more now and will even more as the weather cools. Always love baking in the fall and winter.

    During football season, nachos and tostadas are a go to meal for us. It satisfies all four teenage boys.
