Mom’s Panicked Relief: Seven-Layer Bars

Filed Under: Dessert, Recipes Tagged With: baking 11 Comments

I was panicked. It was our county fair two summers ago and I had to bring bars to a FFA Alumni fundraiser. I had a 19 month old, a two week old, a baseball playing son and thankfully my GriggsDakota mom was staying at our house.  She calmly looked at me and said, “You’re going to make Seven Layer Bars….

Hunk of Meat Monday: Slow Cooker Venison Roast

Filed Under: Uncategorized Leave a Comment

I never understood why my mom cooked venison when we were kids. I didn’t like it. But I tried it. She snuck it into things with out telling us it wasn’t beef. Eventually, we all liked venison. On the prairie, eating wild game is a normal way of life. We need to hunt or the land becomes overrun like what…

A Minneapolis diamond "In the Ghetto"

Filed Under: Misc. Tagged With: athletics, Cristo Rey High School, sports 5 Comments

Have you ever found a diamond in the rough? An unexpected treasure?  It catches you off guard, refreshes your outlook and this weekend the gemstone we found on the south side of Minneapolis was just that.  That “In the Ghetto” song kept playing through my head this weekend because that is where I thought we were headed. My mom had…

What a Foodie Farm Girl Learned on an Egg Farm

Filed Under: America's Farm Table, Family Values Tagged With: agriculture, family, family farm 13 Comments

Have you ever visited an egg farm? The closest I have come to being an egg farmer was when my grandpa hatched chicks for me and we had chickens in the old chicken coop on our family farm. In a very short time frame, they were eaten by a sly fox and my cousin’s dog Daisy.  My egg farming days…

6 Reasons Why It’s Okay To Be A Working Mom

Filed Under: Motivated Moms Tagged With: working mom 21 Comments

The pressure is there to be a stay-at-home-mom (SAHM as the lingo goes). Blogs, articles, chat rooms, friends, relatives all offer up the advantages to being a SAHM. But I don’t think there is enough shared and said on why it is okay to be a working mom. Maybe it is because all the moms that are working and balancing…

Welcome to the Prairie…

I am a mom of three kids and a wife to Nathan. Together we live on the North Dakota prairie, 97 miles from a Starbuck's. I share about family, food, farming and the prairie that I love. I used to commute 98 miles one-way to work but it required too much coffee. So now I am home, consulting, speaking, writing and primarily, juggling family life.
