For the love of mashed potatoes…

Easter chapter two…
Our kids (all of us actually) love mashed potatoes. They are probably Miss E’s favorite food and certainly Hunter would eat them every day if…his mother liked to peel potatoes. On Easter (and all weekend) we enjoyed my mom’s superb cooking. She cooks “heart healthy” but still manages to make foods like mashed potatoes taste very yummy. Or “num num” as Elizabeth says. My mom said she used to “break all the rules” for holidays meaning she cooked with butter, cream, etc. but now she is “too old” for that. So her potatoes and all foods have fat-free and low fat ingredients so that makes you just eat more and more of them. After her tummy was full of mashed potatoes, Miss E learned to make faces from the classic clown Uncle Joe.

As you can see, the penicillin reaction didn’t impact Elizabeth’s appetite.

Note the bib change from the below pic to the above pic. My mom couldn’t have her granddaughter wearing a “Baby’s First Halloween” bib on a Holy holiday like Easter. She magically disappeared to her sewing room and reappeared from her stash with a handmade bib with floral fabric and pink ribbon. More Easter appropriate!

Welcome to the Prairie…

I am a mom of three kids and a wife to Nathan. Together we live on the North Dakota prairie, 97 miles from a Starbuck's. I share about family, food, farming and the prairie that I love. I used to commute 98 miles one-way to work but it required too much coffee. So now I am home, consulting, speaking, writing and primarily, juggling family life.
