Citrus Spice Grilled Chicken

It’s grilling season. Pick up a package of chicken and use this mix of citrus and spicy marinade and get grilling. 

We enjoyed this chicken this past weekend while camping. I served it with an Asian chopped salad (love salad mixes in a bag!) and sweet potatoes, roasted over the campfire, served on a fancy foam plate. There are only disposable plates when I’m cooking and camping. It was a winner of a weekend meal.

You can marinade any cut of chicken with this marinade, breasts, thighs, legs, wings or a whole chicken. I used five large chicken breasts with a little extra marinade. It could be stretched. 

Citrus Spice Marinade:
1/4 cup lemon pepper (I used Tone’s Citrus Grill spice mix)
1 TBSP paprika
1 tsp garlic powder
1 tsp cumin
1 tsp season salt
2 TSBP brown mustard
(1) 10 oz. Rotel tomatoes with green chiles
1/2 cup orange juice
Stir together dry spice ingredients. I made this camping. Yes I camp with bulk sized spices. 

Add brown mustard, Rotel tomatoes and orange juice. Mix all ingredients until combined. 
Pour over chicken, covering each piece. Refrigerate for 2-3 hours minimum.
I fully understand my kids would much rather eat s’mores all summer. However, a good solid meal made outside on the grill and campfire makes them pretty happy too. My husband grilled the chicken on medium low for about 30 minutes, using a digital meat thermometer. I failed to take a picture of the grilling. I was too busy soaking in the sun. 
Chicken needs to get to an internal temperature of 165F. Our meat thermometer said chicken should be 180F. Either way, it was perfectly done. Juicy. Full of big flavor and zest. 
This Citrus Spice Grilled Chicken goes down in the books as a new favorite summer grilling marinade.
