There is an Irish blessing in our family on St. Patrick’s Day. We’re not Irish but we celebrate in grand fashion. It’s Nathan’s birthday today. He’s the man of the house. Father, husband, business owner. I am forever thankful for his commitment to our family and to me. I can’t gush too much about him because that counts as “mushy stuff” and his rule I abide by is…”no mushy stuff on the blog”.
If you aren’t celebrating a birthday today but still want an easy slow cooker corned beef recipe for St. Patrick’s Day, I highly recommend this corned beef recipe that I have made. I also have modified several times this year and added a couple cans of diced tomatoes into the Crock-Pot with the corned beef. It’s guaranteed goodness.
You can always make some minty green cupcakes too. And you don’t want to forget…

Last year we had a huge St. Patrick’s Day green food birthday party for Nathan. This weekend we will be sitting in a gym for a few games of Hunter’s first traveling basketball team weekend and spending any and all in between time outside with our kids in our summer temperatures in March!
For a post basketball tournament, birthday meal at home, I have corned beef ready to put in the Crock-Pot though. Any leftovers we have I will make Quick and Easy Rueben Wraps.

I have never celebrated St Patricks day with food like that I have worn green clothes but corn beef and cabbage is for New Years Day. Learn something every day.
