Just before Christmas, our family makes flatbread. It’s a very thin cracker. Pretty much made from wheat flour, white flour and water. My mom said it was something our poor Norwegian family could afford to make when they were settlers on the prairie. Regardless, the tradition continues. I watched…and took pictures. Kirsti and Robbie got into a rolling competition. The thinner the better. My mom declared it was the best flatbread she had since she was a child when her grandma made it.
After frying the flatbread goes to the oven. Grandma Nola said they made four batches…more than the usual three batches. We ate plenty with a lot of butter on it. Hunter learning from the ace fryer his Great-Grandpa Sonny.

Yesterday we attended the funeral of our friend Shelly. It was a celebration of her life and the best funeral message Nathan and I have ever heard. At the same time, it still was a sad time to see her gone and her family who will miss her so much on this earth. It made Nathan and I reflect on how thankful we are for our family and friends. For all the happy and joyous memories we already have and will continue to create. For flatbread making at Christmas.

I love making flatbread! I wonder if our families have the same recipe…my grandma Anfinrud usually makes it. She also makes the lefse, which we argue is the best…ever! This Christmas, grandma also made rommegrot…it actually tastes alright with lots of cinnamon and sugar! Happy New Year!
